What is Biodynamic Farming?
Biodynamic Farming is beyond organic and beyond complex. So to put it simply, we enrich the soil with biodynamic, homeopathic preps. Essentially, the farm is its own living organism. Biodynamics uses physical substances and metaphysical forces. It encompasses regenerative and sustainable farming practices. And you can surely taste and feel the difference!

Gaia’s Breath Farm is a 265 acre, certified Biodynamic farm located in Jordanville, NY specializing in Heirloom vegetables as well as pastured, registered Heritage breed Glouchester Old Spot pork and pastured, Mother’s milk fed and finished veal.
Our vegetables:
We start with biodynamic and organic heirloom seed varieties selected for their superior taste. To develop their flavor profile, we use our on-farm produced compost to add vital nutrients to the soil which is not found in commercial fertilizers. Our vegetable fields have a three year rotation; vegetable production followed by a year of rest and finished the next year with cutting and light grazing. For our heat loving produce, the heirloom tomatoes, eggplants, peppers, cucumbers, melons and squash we use high tunnels to add the extra heat these crops crave as well as extend the season. In late Fall the high tunnels become home to the cool loving greens such as spinach, bok choy,
mizuna where they are over-Wintered.
Our meats:
We are one of the few farms in the country to produce true farmstead quality meats & charcuterie with our own Johnson & Whales graduate Chef, Christina Chiacchia.
Hand cut pork and veal available fresh at the farmers market
are a staple. Want to go in deeper? Our charcuterie, 2 year aged prosciutto, veal pastrami, country pate’ veal meatballs and more are small batched made. We take the “time,” inordinately large quantities of it, to produce our products. And, our animals are given the care and respect they deserve to live a quality life.
Gaia’s Breath’s Mission is to feed people well with a pronounced terroir specific to our farm. It was the hope of Rudolph Steiner, the progenitor of Biodynamics, that by feeding people well they would have the will to live a full, most developed life. We hope to do our part so you can do yours.
